This gluten-free pizza recipe replaces the flour with cauliflower. Without dairy products, this keto recipe offers an excellent alternative to the carbohydrate-rich versions you know and love.

2 cups of cauliflower rice (Keto and Co is perfect)
2 large eggs
3 tablespoons of coconut flour
2 tablespoons avocado oil (or olive oil)
1 teaspoon of fine salt
1 teaspoon of dried Italian herbs

  1. Preheat the oven at 180 ° C.
  2. Cook the cauliflower on the microwave for 5 minutes, then transfer it to a clean cap. Press carefully to remove as much water as possible. You should have about a cup of this cauliflower paste.

  4. Carpet a parchment paper plate and shape your pizza crust on it. Do not spread it thinner than a cm, otherwise it will tear.
  5. Cook 25 to 30 minutes until the cauliflower crust is golden.
  6. Add your favourite toppings and put them in the oven for another 5 minutes to make them even more crisp.

Why choose this gluten-free pizza dough?


It is not made with tapioca or corn flour

Most of the recipes for online cauliflower crust are not low in carbohydrates. Here is why: the roasted cauliflower-as used in this recipe and many others-is full of moisture. Therefore, it can be difficult to cook with. Many recipes add starch to soak moisture. The starch of corn, potato or tapioca is often used, made up of 100 % carbohydrate. The starch ensures that the pizza dough does not stick to the pizza mould.

It is made from cauliflower

Many recipes of gluten-free pizza crust in cauliflower use plain white flour as an ingredient. This low-carbohydrate pizza crust uses coconut flour, which contains 4 grams of healthy and saturated fat for two tablespoons. Coconut flour is an excellent source of TCM (medium chain triglycerides), the preferred energy source of your body to convert fat into energy (ketones).

A pizza-free pizza dough without lactose

Most recipes mix with grated mozzarella or parmesan in the crust, making it inappropriate if you are lactose intolerant. This recipe does not use mozzarella or any other form of dairy product. Instead, the Italian seasoning gives this crust its flavour. You can find an Italian seasoning at the grocery store, or make your own blend by combining basil with a teaspoon of garlic powder, oregano, thyme and marjolaine.

How do I make my paste?


Buy pre-roasted cauliflower
We refer to the Keto and Co brand, which develops pre-roasted cauliflower rice blends. Avoid cauliflower in frozen fens, as this could detonate your gluten-free pate. Otherwise, the best method is to use a robot. Buy a cauliflower head at the store, then cut it into small to medium-sized florets. Transfer the cauliflower into the culinary robot and beat until it is in small pieces.

Remove as much moisture as possible
Cauliflower contains a lot of water, so it's best to extract as much moisture as possible before molding it into pizza dough. To do this, microwave the cauliflower, then use a tea towel, stamen or other cloth to wrap the cooked cauliflower and squeeze as hard as possible.

Use parchment paper
As it is difficult to extract all the water from the cauliflower, your dough may still be a little sticky. Be sure to place a sheet of parchment paper on the plate under the pizza. If you place the dough directly on a pizza stone or baking sheet, it could remain glued to the surface after baking.
